"In the kitchen, I always seek a living balance, a continuous relationship between who we are and what we choose to bring to the plate. I define my cuisine as pop. For me, "pop" is not a style, but a cultural position.

Pop means accessible without being banal, contemporary without being ephemeral. It's a direct language, capable of reaching everyone without sacrificing depth. Cuisine isn't legitimate because it "derives from," but because it works today and entertains us. Simbiosi is born from the idea that food isn't just technique, but a cultural gesture. An open dialogue with the land, with producers, with memory, and with the personal experiences that have shaped my journey.


Tuscany is our roots, but not our border. Contamination is part of my professional history and my way of thinking about cooking and life: observing, absorbing, exploring different languages and bringing them together in a coherent and recognizable synthesis.

I don't seek complexity as an exercise, nor tradition as an obligation.

The past is an archive from which to draw what is needed. The creative act is at the service of experience, not the ego.

Each dish is designed to be readable, alive, and current.

Quality and pleasure are not in opposition: they can coexist without hierarchies.

THE GASTRONOMIC PROPOSAL

The menu changes every three months, following the natural rhythm of the seasons.

It's our way of staying tuned: to the products, to the territory, to the weather.


The menu is creative and seasonal, built around carefully selected ingredients. The fresh pasta is made daily with organic ancient Tuscan grains. The meats are of the highest quality, selected for their identity and provenance, as are every ingredient in the kitchen.

Each menu is born from a creative process that feeds on experiences.

Personal, professional, travel, and shared experiences. Everything we experience finds its way into the kitchen and finds concrete expression on the plate.


The season is the starting point.

Creativity is how we interpret it.
