Our winery was born from a precise vision, built and curated by Gabriele Cupone and Samantha Becherini as an integral part of Simbiosi's identity.

It brings together approximately 400 organic and natural wines, the result of a meticulous selection. It's not a list built for representation, but for conviction. Each bottle is chosen for its authenticity, consistency, and ability to express a region. Great attention is paid to native grape varieties, rare varieties, and projects to revive ancient grape varieties. We're interested in the precise identity of each grape, the recognizability of a soil, and the winemaker's touch reflected in the glass. The list spans Italy with a selective eye, highlighting micro-productions and businesses that work with rigor and awareness.

Alongside small, independent winemakers, there are also renowned wineries that interpret wine with personality and expressive clarity. The selection is designed for depth and character.

Wine is an integral part of our language. It enters the plate, complements it, strengthens it, and connects it with the land from which it originates.
